Orange and Blueberry Madeira Cake

Since a few of my previous posts have not gone exactly to plan, I decided to go for something a lot more simple this week. I think my parents were thankful for something a bit more familiar; although they have enjoyed some of my bakes, they are sticklers for a more traditional Victoria sponge and haven’t exactly relished in the amount of cardamom etc. flying around. Cloud Catcher Cakes

Even though I claimed in my last post for lemon and aronia berry iced biscuits that I was not going to follow the bake off this post also took ideas from the technical challenge of cake week, jaffa cakes. Chocolate orange has to be one of my favourite flavour combinations and, unsurprisingly, jaffa cakes are definitely one of my first choices when tucking up with a cup of tea in front of Pointless (Yes, I mainly watch pointless as an excuse for tea and biscuits; no, I am not secretly in my 50’s).Therefore, when I made my own a few years ago I hate to admit they weren’t as good as the shop bought ones, purely because I think they are pretty hard to beat! Lemon and Aronia Berry Iced Biscuits

Being a baking blog I feel it is only right that I pay homage at least once over the next 10 or so weeks to the Great British Bake Off. For the last couple of years I have tried, and failed, to follow it. Since I fully expect to fail again this year even with my blog I have decided to have a go at the odd challenge and see how I get on. In these previous attempts I have also been faced with a varying degree of success. I have definitely had some pretty good bakes that would have seen me through on some occasions, but I have also had some that would have left me a long, long way from the Hollywood handshake. Apple and Ginger Crumble Shortbread

I’ll admit now that this blog post is definitely the most spontaneous one yet even though the flavours are fairly basic. The recipe came about from a combination of an early finish from work and a hungry father whinging that there was ‘nowt to eat’ with his cup of tea. After beating an answer out of him (not literally) to find out what he actually fancied, I came up with these little apple and ginger crumble shortbreads. I have made a similar rhubarb crumble shortbread at work before which has proved quite popular, but since I was limited to the ingredients I had in the house I decided to go for a more traditional take.
