Porn Star Martini Cheesecake Squares

I have mentioned in a couple of my posts recently that I am off to France at the end of next week. This, of course, was a great excuse for a night out and allowed me to inflict my baking on my friends who, surprisingly, still put up with it!

In some ways I am marginally relieved at my ability to discuss alcohol in any form, but this posts acts as part 1 of 2 baking episodes I had this weekend. Since I haven’t done anything alcohol related in a while, I thought I’d use this as the perfect excuse to do something fancy. I therefore pinched a recipe from Sainsbury’s and decided to give these bad boys a go by incorporating the prosecco into the actual cheesecake mix, and putting through a passionfruit swirl instead of raspberry.

The addition of the prosecco might have made the mix a little runnier than I’d like and this is largely due to my gung-ho style of add it and see. This meant it took a lot longer to bake, but I think on the whole it still turned out fairly well. I would perhaps revisit the amount of cream cheese I put in in hindsight, but you live and learn. The flavours did stand out pretty well as the passionfruit helped cut through the sweetness, and the texture was lovely and smooth.

This is a recipe, again like many others, that you can quite easily play around with so don’t let your cocktail inspiration stop here! Unlike my 7am market stints, however, I am slightly less talkative today so you’ll probably be relieved to hear that I will leave you to your own devices when deciding how to tackle them! Either way I hope you enjoy!

Porn Star Martini Cheesecake Squares

Porn Star Martini Cheesecake Squares (makes approx. 20 squares)

  • 100g butter
  • 300g digestive biscuits
  • 600g cream cheese
  • 450g greek yoghurt
  • 250g caster sugar
  • 3 eggs
  • 1.5tsp cornflour
  • A small bottle of prosecco
  • 6 passionfruits
  • 1tsp icing sugar

Method

  1. Preheat your oven to 170C/ 150C Fan.
  2. Melt the butter in a saucepan.
  3. Crush the biscuits with the end of a rolling pin and stir through the butter until all the crumbs are evenly coated and start to clump together. Push down into a lined baking tin.
  4. For the filling mix the cream cheese, yoghurt, sugar, eggs and cornflour until completely mixed. Keep adding small amounts of prosecco until you are happy with the flavour, mixing thoroughly after each addition. Pour the mix on top of the biscuit base.
  5. Put the passionfruit seeds and the icing sugar in a food processor and blitz until most of the seeds have broken up.
  6. Drizzle over the cheesecake mix and put in the oven for about 50 minutes. It’s baked when the top looks set but there is still a slight wobble when you shake it lightly.
  7. Leave to cool slightly and then pop in the fridge to set completely before cutting into squares and serving.
