While I was really excited when one of my friends from work asked me to make her daughter’s birthday cake, it’s safe to say I was also slightly apprehensive since I haven’t really made anything that requires any major decorative finesse in a while. And since it was also for her 18th birthday, I felt I really did need to pull out the stops.
Although I have to admit it is a little late (I 100% blame numerical reasoning tests and my decreasing ability to count), I am continuing, a week late, with the health kick trend in preparation for my tough mudder (which is now only a few weeks away) with my offering of vegan peanut and date breakfast muffins. Again it is debatable whether they can really be deemed healthy as the no refined sugar trend has been firmly kicked to the curb, but I thought they would provide an interesting breakfast alternative without packing in too many calories.
After about a year of consistent blogging you have probably noticed most of my recipes are not largely aimed at healthy eating and lean to the more indulgent end of afternoon snacking. Apart from a few posts, including my healthier honey gingerbread and my beetroot brownies, a lot of my posts definitely warrant the #howtogetfat on my instagram. However, since I am running a tough mudder in about a month’s time (which I promise not to bore you with/ bring up too much), I thought a few slightly more nutritious offerings, if you will, wouldn’t go amiss.
Although I do in some ways feel I need to apologise for the abundance of cake on my blog recently, I feel like I can be forgiven considering the circumstances. Although baking is, on the whole, definitely more subjective I would have to contradict that in this instance: if you do not like the sound of caramel shortbread and cake combined then, I’m sorry, but you’re wrong.
In the wise words of the cookie monster, ‘C is for Cookie, that’s good enough for me’. And, unfortunately for Hayley, it’s going to have to be good enough for her too. My decision to make Hayley a cookie cake for her 23rd birthday was, however, not solely sparked by my desire to use what is the most overused quote in blog posts about cookies, but because I have been meaning to try it for ages. And if you have ever had a birthday cake from Millie’s Cookies, you will understand why. Let’s put it this way: if it’s anywhere near as good as the original Hayley is going to have to make a dash with it before I stop plucking my eyebrows, start taking some testosterone supplements for a more gruff sounding voice and dye myself blue as an excuse for petty cake theft.
Although you could argue I have already done one new years post with my hazelnut and salted caramel pavlova, I am arguing that two cannot hurt, especially since this is technically my first bake of the new year. However, for me the decision to make a Vasilopita is somewhat contradictory: although it is traditional in certain cultures at this time of year, I couldn’t even say the ruddy name of the thing until I googled it!
Although I hate to tell you this, I have to admit that I lied slightly in my post for Mince Pie Swirls: I may have had all my blog posts planned, but not all of them were Christmas themed as I promised. However, I’m sure you’ll forgive me and be able to take this as some sort of respite from the festive season, especially if you have the same Grinch-like tendencies as I do.
