It’s safe to say that some of my blog posts this season haven’t quite gone to plan, and this instance is no exception. However, in this instance that might not be such a bad thing! Ladies and gents I give you what is literally a heart attack in a bite: the double chocolate orange caramel ‘monster’ cake!
You might have noticed in a few blog posts recently that I have’t been able to give my posts my full creative time and attention. This probably is quite a good thing as there has been a lot less butchering of different recipes, but I also have to admit that, unfortunately, this week is no different. I say unfortunately with a very sorry, not sorry attitude, and that’s because they are really delicious even though they are vegan!
Although I do in some ways feel I need to apologise for the abundance of cake on my blog recently, I feel like I can be forgiven considering the circumstances. Although baking is, on the whole, definitely more subjective I would have to contradict that in this instance: if you do not like the sound of caramel shortbread and cake combined then, I’m sorry, but you’re wrong.
So first things first happy new year everyone! Now we can all happily wave goodbye to 2016 with a general sigh of relief and look towards a hopeful 2017 with it’s first few sober and sweaty months at the gym until we all discover wine and chocolate again. Let’s face it, it’s going to happen, and I will be here with my blog helping you all fail along the way (cue evil laugh). But on a more positive note, I hope you all had a wonderful new years eve (and I do wish you luck really). Anyway, back to the baking…
Although they are great together earl grey tea and lemon aren’t necessarily flavours you would associate with caramel. But as with my wasabi blondies I decided to give them a go and took the Dr. Pepper attitude of ‘what’s the worst that could happen?’. Fortunately this attitude paid off! While the decision was in some ways last minute on the whole they turned out pretty well. The smoothness of the tea works well with the caramel and the hint of lemon helps cut through some of the sugar. The earl grey flavour makes it a perfect tea time snack for anyone with a sweet tooth, but even if you don’t a small piece never hurt anyone! Continue reading “Lemon and Earl Grey Caramel Shortbread”
