Although it is a little late (I 100% blame numerical reasoning tests and my decreasing ability to count), I am continuing with the health kick trend in preparation for my tough mudder (which is now only a few weeks away) with my offering of vegan peanut and date breakfast muffins. Again it is debatable whether they can really be deemed healthy as the no refined sugar attempts have been firmly kicked to the curb, but I thought they would provide an interesting breakfast alternative without packing in too many calories.
As a continuation of my ‘less refined sugar health kick’, this week I have some ‘healthy’ orange, date and walnut biscuits to offer you. And yes, I did mainly use this recipe as a way of using up the massive pot of Stevia I now have in my larder after making my rhubarb, spelt and pecan crumble for my last post.
So in case you haven’t noticed (although you probably did months ago when every shop decided it was acceptable to bring Buble back) it’s getting pretty close to Christmas. However I have decided to stand out from the crowd and (drum roll please) post Christmas recipes for the whole of December! I’m not normally a huge Christmas person as I only tend to start thinking about it a week or so before and while this is true in most cases this year, I must admit it is hard not to get excited about the food! Although nothing can really beat Christmas dinner, you can never underestimate a good Christmas cake or, in this case, mince pie.
Even after having spent nearly half a year living in the alps where I ate more than my body weight several times over in reblochon, tomme, and fresh baguettes, I have to admit I had never come across Pain de Savoie. I also have to admit that I wish I had; it is basically a cross between tartiflette and fondue, so in my eyes it can’t really get much better. And, to top it all of, it kind of looks like a cake!
