Even after the chocolate and marshmallow birthday cake I posted for Lauren’s birthday a couple of weeks ago, I am taking the risk of being repetitive and posting yet another chocolate cake. But this time, it’s covered in Brownie (cue the drool).
Since I haven’t written one in a while, I thought this Sunday I would try my hand at another review and treat myself to something I haven’t baked: at the end of the day it’s probably nicer! While it does lack the sense of achievement that some of recipes have managed to produce, it definitely starts to fill that GBBO hole that is already forming as I prepare to get all Paul Hollywood up in here (bar that stare thing he likes to do.)
Although the severe neglect I have shown my blog in the past few weeks seems to be getting worse, I promise you I am about to (fingers crossed) make an attempt at some sort of redemption. Since I was too busy selling cheese this bank holiday weekend, which gave me the perfect opportunity to bask in the unusually warm British sunshine, I didn’t manage to get a post out. But, yet again, I’m sure you’ll forgive me, mainly because you don’t have much choice! I therefore offer you the first of not one, but two posts this week; you can’t say I don’t spoil you!
For the first time in a while I can proudly admit that a decision to do a post isn’t entirely random and last minute. Not only had I been a questionable friend in forgetting to make cake for not one, but two of my best friends’ birthdays, one of the girls I was closest to at work finally managed to escape and find a new job so I felt there was cause for celebration all around! So after joking about bringing a bottle of bucks fizz to work I landed on these cupcakes as, I will admit, a somewhat reluctant alternative. But hopefully they were worth it!
While I was really excited when one of my friends from work asked me to make her daughter’s birthday cake, it’s safe to say I was also slightly apprehensive since I haven’t really made anything that requires any major decorative finesse in a while. And since it was also for her 18th birthday, I felt I really did need to pull out the stops.
After about a year of consistent blogging you have probably noticed most of my recipes are not largely aimed at healthy eating and lean to the more indulgent end of afternoon snacking. Apart from a few posts, including my healthier honey gingerbread and my beetroot brownies, a lot of my posts definitely warrant the #howtogetfat on my instagram. However, since I am running a tough mudder in about a month’s time (which I promise not to bore you with/ bring up too much), I thought a few slightly more nutritious offerings, if you will, wouldn’t go amiss.
This week on the blog I thought I would give you a welcome, or unwelcome, reminder that the countdown to Valentine’s day has properly begun. Although it is a bit of a Marmite holiday I decided that, if nothing else, it is a great excuse for baking. Whether you’re baking for a loved one or comfort eating your single status away, these cookies are pretty much perfect in either instance.
