And so the Christmas bakes begin, and this year we are starting with mince pie flapjacks. Admittedly, I am questioning whether it is a little early – usually I wait until the middle of December before I consider anything past an advent calendar (I may be 26, but I’m not going to pass up an excuse to eat chocolate every day). But, given everything that has been going on this year, why not start the Christmas cheer a little early!

Chocolate Chip Cookie and Fudge Celebration Cake
After a prolonged period of laziness and lack of focus on the baking front, today I actually have the second proper birthday cake in the space of two months (with another couple to follow very shortly). Even though it seems like an age, I have finally decided to try and hone in on what decoration skills I have left, and it’s safe to say there is room for improvement. However, I have managed to complete another semi-decent attempt, and I am relieved to brand it blog-post worthy.

Cranberry and Orange Oat Bars
This week I decided to actually commit to the decision to do something a little bit healthier. This was largely spurred on by my decision to calculate the number of calories in per oreo brownie (trust me, if you do decide to give that recipe a go and want to enjoy eating it, then I definitely would not recommend doing so!).
Oreo Fudge Brownie (Vegan)
In one of my previous posts for apple crumble bars, I made it firmly clear that my becoming vegan was not an option. Even though I am posting another vegan recipe today, I very much stand by this statement. However, I do have to admit that I am starting to understand how it could be possible after trying this recipe, and that is probably because, while it is vegan, it certainly does not cut out any of the calories!
Popcorn Sprinkle Cake
Everyone who has read my blog previously will know that decoration is not my strong point. Therefore, when I have a birthday cake that turns out as planned, it’s almost a cause for celebration in itself. Admittedly, this one did not go 100% to plan, but it is close enough for me to actually be pretty happy with it!
