I would love to say that, after yet another week off the blog (apologies), I have a mind-blowing recipe with an incredibly interesting and witty intro for you. However I do not. Instead, I have another healthier option in the form of baked cinnamon doughnut muffins in my bid to stave off the inevitable weight gain that’s looming in the not so distant future (watch this space).
So after being a bit lazy in terms of blog posting yet again last weekend, this week I am proud to present the first bake I have managed to complete in quite a while that actually involves some technical skill – a limoncello meringue cake. Although the reason for whipping out the limoncello on a Friday night was for baking, and not something slightly more fun, is a little depressing, I think any excuse will do!
Even though I have thoroughly enjoyed the few weeks of pure indulgence that was Christmas and New Year, I’ve decided to hop back on the healthy eating band wagon with my new recipe this week (and the scales are definitely gratefully for it).

Christmas is always such an indulgent time of year, and while I will be trying my hand at a few healthier recipes over the coming weeks, I thought I would give myself another little treat before the ‘purge’ begins.
As we enter the December ‘limbo’ between Christmas and New Year, I have decided that now would be the perfect (?) time to put up my Christmas blog post. Admittedly, the timing was largely dictated by my almost complete absence from any kind of social media over the festive period, but who doesn’t love an extra treat in the time anyway?

While you will find that I am heading back to the birthday cake theme very shortly, today I have decided to embrace the season again with something a little more festive – mulled wine blondies. While these are a little more unusual, the sweetness of the blondie makes it the perfect Christmas bake even if you aren’t the biggest fan of mulled wine!
And so the Christmas bakes begin, and this year we are starting with mince pie flapjacks. Admittedly, I am questioning whether it is a little early – usually I wait until the middle of December before I consider anything past an advent calendar (I may be 26, but I’m not going to pass up an excuse to eat chocolate every day). But, given everything that has been going on this year, why not start the Christmas cheer a little early!
After a prolonged period of laziness and lack of focus on the baking front, today I actually have the second proper birthday cake in the space of two months (with another couple to follow very shortly). Even though it seems like an age, I have finally decided to try and hone in on what decoration skills I have left, and it’s safe to say there is room for improvement. However, I have managed to complete another semi-decent attempt, and I am relieved to brand it blog-post worthy.

This week I decided to actually commit to the decision to do something a little bit healthier. This was largely spurred on by my decision to calculate the number of calories in per oreo brownie (trust me, if you do decide to give that recipe a go and want to enjoy eating it, then I definitely would not recommend doing so!).
