Chocolate Orange Gingerbread Christmas Mountain

So now Christmas is almost officially upon us, I thought I had better go out of my Christmas themes posts with a bang. This, of course, leads to something that involves far too much thought, concentration, effort etc. in the week before Christmas. It is safe to say that my brain is already completely with anything festive, so I will apologise in advance for any Christmas dong related ‘puns’ that slip in. Fortunately for you I have already dodged the Leona Lewis ‘One More Sleep’ reference and I am not feeling creative or humorous enough to come up with many more. So you are relatively safe. Apricot, Almond and Orange Stollen Slices

Now I have posted my chocolate and cherry semi-naked cake I, as promised, will return to Christmas bakes; since it is now only 1 week away from the actual day (explaining why I am slightly nervous that I still haven’t finished my shopping) I think it is probably a fairly acceptable thing to do. Since I have already done my take on mince pies, I thought I would have a bash at another of my favourite ways to gain weight at Christmas, stollen. Mince Pie Swirls

So in case you haven’t noticed (although you probably did months ago when every shop decided it was acceptable to bring Buble back) it’s getting pretty close to Christmas. However I have decided to stand out from the crowd and (drum roll please) post Christmas recipes for the whole of December! I’m not normally a huge Christmas person as I only tend to start thinking about it a week or so before and while this is true in most cases this year, I must admit it is hard not to get excited about the food! Although nothing can really beat Christmas dinner, you can never underestimate a good Christmas cake or, in this case, mince pie.

Pumpkin and Coconut Granola

If you can’t tell by veggie baking theme I seem to have adopted over the last couple of weeks, the attempt to be slightly healthier continues. Since my chilli beetroot brownies provided a very, very slightly skinnier version of the treat that contributes to probably about 20% of the reason I even have a gym membership, I decided to take it a step further. And what better and more original way to do this at Halloween than with pumpkins. Having read that about 90% of pumpkins are used for carvings, I decided to try and pay them the credit they were due as an ingredient.
